Lentil soup
3/4 c. dried lentils
4 organic single celery stocks, chopped
3/4 lb. organic carrots, chopped
1 white onion, diced
6 cloves garlic, diced
2 T. olive oil
1tsp. thyme
3 c. organic veggie broth
Make sure to soak the lentils in water over night so you won't have to cook the soup as long.
In a medium pot, sauté the garlic in olive oil for about 1 minute, then add the onions, celery, and carrots. Sauté for 5 minutes.
Then add lentils, thyme, and broth. Bring to a boil.
